Gratinierter Ziegenkäse auf Salat

Gratinierter Ziegenkäse

Dieser Salat ist eine meiner liebsten und einfachsten Vorspeisen die ich mache. Egal ob zu einem Festessen, einem Dinner mit Freunden oder auch einfach mal unter der Woche. Das Zusammenspiel von süß, sauer und einer nussigen Note – und er hat bisher allen geschmeckt, selbst wenn es vorher hieß, dass Ziegenkäse nicht schmecke. 

Zutaten für 2 Personen (4 Personen als Vorspeise):

  • Salat z.B. Lollo Rosso oder Eichblattsalat (eine Hand voll pro Person)
  • ca. 15 Cherrytomaten
  • Eine Ziegenkäserolle (180g)
  • 1 Baguette 
  • Himbeeren (eine Hand voll)
  • 2 EL Zucker 
  • 100g Nüsse (Walnüsse) 
  • Honig/Agavendicksaft 
  • Fruchtessig (z.B. Kirsch oder Himbeer)
  • Olivenöl 
  • Pfeffer & Salz 

Schritt 1/5
Ofen auf 220 Grad vorheizen
Ziegenkäserolle (180g) – 1 Baguette – Honig/Agavendicksaft

Das Baguette in 1-2 cm breite Scheiben schneiden und auf ein mit Backpapier ausgelegtes Blech legen. Die Ziegenkäserolle ebenfalls in 1 cm breite Scheiben schneiden. Nun das Blech für 15 Minuten in den vorgeheizten Backofen in das obere Drittel schieben.

100g Walnüsse – 2 EL Zucker 

Während dessen den Zucker in einer Pfanne zum schmelzen lassen und die Nüsse hineingeben, kurz karamellisieren lassen und herausnehmen.

Salat – ca. 15 Cherrytomaten – Himbeeren 

Den Salat waschen und zerrupfen. Die Tomaten waschen und vierteln. Die Himbeeren waschen.

1 EL Fruchtessig – 2 El Olivenöl – 1 TL Honig/Agavendicksaft – Pfeffer & Salz

Fruchtessig, Olivenöl und Honig/Agavendicksaft zu einem Dressing verrühren. mit Pfeffer und Salz abschmecken. Nach Geschmack evtl. noch Kräuter zugeben.

Schritt 5/5
Den Salat und die Tomaten mit dem Dressing vermischen. Die gratinierten Ziegenkäsebaguettes aus dem Ofen nehmen und auf den Salat legen. Abschließend die Himbeeren um den Salat verteilen und die Nüsse zerbrechen und über den Salat geben.
