Herzhafter Hefeteig


Hier eines der ersten Basics in der Küche: der Hefeteig. Vielseitig einsetzbar und einfach lecker gehört er zu einem der wichtigsten Teige, die man kennen sollte. Der Geheimtipp ist die ausreichende Handarbeit!

Zutaten für 2 Portionen:

  • 250 ml lauwarmes Wasser (nicht heiß!)
  • 1 Würfel Hefe oder 2 Päckchen Trockenhefe
  • 500 g Mehl 
  • 1 EL Olivenöl
  • Eine Prise Salz & Zucker

Schritt 1/4
250 ml Wasser – 1 Würfel Hefe – Eine Prise Zucker&Salz

Lauwarmes Wasser bereitstellen, Hefe hineinbröseln und eine Prise zucker und Salz hinzugeben. Umrühren und 10-15 Minuten ruhen lassen.

Schritt 2/4
2 EL Olivenöl – 500 g Mehl

Das Mehl abwiegen, sieben und Aufhäufen. In diesen Haufen eine Kuhle drücken und die Hefeflüssigkeit & das Olivenöl hineingeben. Nun kommt das wichtigste: den Teig verkneten – und zwar per Hand und das mindestens 10-15 Minuten. Wem das zu mühselig ist, kann anfangs auch die Maschine mit dem Knethaken benutzen. Aber wenigstens die letzten 5 Minuten sollte mit der Hand weitergeknetet werden. 
-> Die Hefe wird durch die Wärme deiner Hände aktiviert und kann so anschließend gut gehen.

Schritt 3/4

Nun sollte der Teig mit einem Baumwoll-/Küchentuch abgedeckt werden und an einen warmen Ort gestellt werden. Wähle eine nicht zu kleine Schüssel, weil der Teig sich bestenfalls vervielfacht. Der Teig sollte nun mindestens 40-90 Minuten gehen.

Schritt 4/4

Die weitere Verarbeitung hängt nun ganz von dem Rezept bzw dem Vorhaben an. Wenn es eine klassische Pizza geben sollte, dann ist mein Tipp, den Teig auf dem Blech nochmal gehen zu lassen, bevor er belegt und gebacken wird.
