Seit Jahren ein beliebtes und gewünschtes Mitbringsel auf allen Grillpartys – Aioli. Ich liiiiiiebe Aioli und seit meine Mutti dieses Rezept zum Grillen macht, ist es bei allen beliebt. Ob zum frischen Baguette zum dippen oder zur leckeren Bratwurst vom Grill, Aioli passt meiner Meinung zu allem, wenn man auf (frischen) Knoblauch steht.

Zutaten für 6 Personen:

  • 2 Eigelb 
  • 3-4 Zehen Knoblauch 
  • Prise Zucker 
  • Salz & Essig nach Geschmack 
  • Ca. 500 ml neutrales Öl (Sonnenblumen- oder Rapsöl)

Schritt 1/2
3-4 Zehen Knoblauch – 2 Eier

Die Knoblauchzehen sollten so klein wie möglich gehackt werden. Wenn die Stücke zu groß sind, hat man sie später im Mund. Die Eier trennen und die Eigelb in eine Rührschüssel geben. Den Knoblauch ebenfalls in die Schüssel geben. 

Schritt 2/2
Essig – Prise Zucker – Salz – neutrales Öl

In die Schüssel kommen nun etwa ein EL heller Essig, eine Prise Zucker und Salz. Die Küchenmaschine/der Mixer sollte nun auf der höchsten Stufe stehen. Das neutrale Öl wird jetzt nach ein paar Minuten, während die Maschine läuft, in einem feinen Strahl dazu gegeben. Mit der Zeit solltest du sehen, dass die Masse dickflüssiger wird. Wenn die Konsistenz gefällt, stellst du die Maschine ab und probierst einmal. Nun schmeckst du ab, ob noch Salz, Essig oder Zucker fehlt. Wenn Du noch Essig hinzufügst wird die Konsistenz wieder flüssiger. Wenn du es gern wieder dickflüssiger hättest, dann gibst du während dem Rühren einfach nochmal Öl dazu.

Wenn dir die Masse nicht reicht, dann kannst du das ganze mit Wasser verlängern und dann wieder mit Öl andicken. Wichtig ist bei dem ganzen, dass die Zutaten etwa Zimmertemperatur haben und das Öl in einem wirklich feinen Strahl oder in kleinen Schlücken hinzugegeben wird.
